Join us for an evening of cooking a seasonal, healing meal––from the comfort of your own kitchen! Inga Bylinkina, Academy Instructor & Holistic Healer, will teach you the medicinal properties of the delicious Chickpea, Sweet Potato and Eggplant Coconut Curry whilst showing you how to make it.
This dish supports the transitional season of Autumn, which requires particular care for our immunity: our stomach, spleen, and lungs as our bodies navigate the movement out of Summer’s Yang energy into the colder Yin phase of the year.
This cookalong will offer a sneak peek into the Academy Healing Nutrition’s Food as Medicine principles, as well as our dynamic holistic health coaching program starting this October. AHN UK Co-founder Patricia Lopez & Operations Director Sophie Gibbin will be on hand to help guide you through the cooking experience and answer any questions you may have.
Cooking with us is highly encouraged! Please make sure you have the below ingredients ready for the evening alongside a heavy bottom pot.
Ingredients
2 TBSP Ghee or virgin coconut oil
1 small leek, or 1 medium onion, finely chopped
3-4 cloves garlic, minced
4 teaspoons grated fresh ginger
1 tablespoon whole cumin seeds
1 teaspoon ground turmeric
1 teaspoon ground coriander
1/2 tsp smoked paprika
1/4+ teaspoon red pepper flakes, or to taste
1 medium eggplant
1 tbsp olive oil
1 medium/large sweet potato, peeled & cut into 1/2 inch dice
1 (14-ounce/400ml) can chickpeas, drained & rinsed, or 1 1/2 cups cooked chickpeas
1 (14-ounce/400ml) can diced tomatoes, with juices, or 1 1/2 cups fresh chopped tomatoes
1 (14-ounce/400ml) can coconut milk
1 (5-ounce/150g) package baby spinach, or loose fresh spinach
1/2 tsp sea salt
Best to serve with…
Cooked basmati rice, quinoa, millet, or sorghum
Chopped fresh cilantro (or basil), lime wedges
Coconut yogurt
Mango or tamarind chutney
