Green Smoothie/Soup Recipe

Here is a recipe for a refreshing, easy to digest, cleansing smoothie-soup that is filled with the green of spring. Enjoy this warm or hot as a part of your meals. Your liver will love you for it.

Makes about two 8-ounce servings.

Ingredients

1-2 cups pure water for steaming

2 medium celery stalks, chopped

1 whole zucchini, chopped

1 cup string beans, ends trimmed, chopped

½ cup fresh parsley

Optional: add garlic, ginger, sea salt and pepper to taste. You can also add some freshly squeezed lemon.

Directions

  1. Steam all the vegetables (except parsley) for about 8 minutes or until bright green, tender but not mushy. Try not to overcook, which can decrease nutrient value.

  2. Combine all the ingredients, including parsley, in a blender, using the remaining steaming water as needed as a thinning agent. Puree until smooth, adding more water to reach your desired consistency.
